Last night's dinner consisted of three super yummy pizzas!! We had pepperoni, spinach and mozzarella, and Mediterranean. They were all delicious and all pretty easy to do!

Pepperoni Pizza:
Pizza Dough
Store bought pizza sauce
Mozzarella
Pepperonis
Spinach and Mozzarella:
Pizza Dough
Olive oil
Parmesan Cheese
Garlic
Spinach
Tomatoes
Fresh Mozzarella
Mediterranean:
Thin Crust Pizza Dough
Pesto (I make mine myself. I will include the recipe below)
Chopped Kalamata Olives
Chopped Tomatoes
Feta
Basil Leaves
Chicken Breast
I wish I could tell you quantities for all of the ingredients but it's pizza, so I just sprinkled as much as looked good :)
For the pepperoni pizza just kneed your dough into a circle.
Grease your pan and lay down the dough, then throw on the sauce, the mozzarella, and the pepperoni.
Bake at 425 degrees for 15-20 minutes. Super simple, normal pepperoni pizza. Had to have something the kid would eat. She's SUPER picky.
Next, moving onto the Spinach and Mozzarella. Start off buy sauteing some garlic in the pan with olive oil.
Thrown in your spinach and turn until wilted down. Add your tomatoes and season with salt, pepper, and garlic powder if you like.
Kneed out your dough and lay it down on a greased pan. Pour a light layer of olive oil over your dough and sprinkle the entire dough with Parmesan cheese.
Add your vegetables.
Cut up your fresh mozzarella and spread it around the pizza.
Bake at 425 degrees for about 15-20 minutes.
Lastly, moving onto the Mediterranean pizza.
Season your chicken breast with salt and saute in a pan until cooked through.
Kneed out your thin crust and spread it as thin as possible. I didnt get mine as thin as I would have liked. This pizza is far better when it's crispy. Spread a thin layer of pesto onto the crust.
Pesto Recipe:
Bunch of basil
Pine Nuts (1/3 amount of the basil)
Parmesan (1/3 amount of the basil)
1 tbl of lemon juice
1-2 cloves of garlic
Olive oil to consistency
Put all of the basil in a food processor. Pulse a few times and then add the pine nuts. Pulse again and then add the parmesan. Chop up until mixed and then add the lemon juice and garlic. Turn on the processor and keep mixing while slowly adding olive oil until at the consistency wanted. Add salt to taste.
Place all the your veggies on, chopped tomatoes, feta, basil leaves, and chopped up Kalamata olives. Chop up your chicken breast and add slices on top.
Bake in a 425 degree oven for 15-20 minutes.
...and your pizza party is ready!!
