It's frickin freezing Mr. Bigglesworth!!! Wind chill of -3 degrees today. It's one of those days when you just want to stay inside, keep warm, watch movies, and eat your favorite comfort foods. One of mine is grilled cheese. Last summer I headed over to SOWA, a craft fair/farmer's market/antique shop in Boston. One of the vendors there was Roxy's Gourmet Grilled Cheese and they made all of these delicious grilled cheese combinations. One of them was the Green Muenster. Muenster cheese, guacamole, and applewood bacon. YUMMO!! It had been some time since I had eaten the sandwich but the memory of it was just so delicious that I decided to make my own version!
I got my bacon cooking and then I started out by making my guacamole. I used my favorite guacamole recipe from Chipotle.
I sliced up my avocados and mashed them up a little.
Then I added all the other ingredients and mashed to consistency.
Salt slightly under what you would usually do and this why... Here is where I added my little something extra. I had recently gone to a restaurant and had guacamole with FETA in it. Yes, feta! It is delicious, believe me. So when making my guacamole for this sandwich I added a bit of feta. I mixed some in and then sprinkled some on top for a little extra yumminess.
Once my guac was done and bacon was cooked it was time to build the sandwich! I used sliced Italian bread because I am not a big fan of sourdough, but if you are, that's a good one to use too. I spread guacamole on each slice of bread.
Then add three slices of muenster cheese (or more for extra cheesiness), bacon, and tomatoes.
Slather each side with butter (I said it was yummy, not healthy) and throw it on the skillet. I covered mine for a couple of seconds to get the cheese all hot and melty. Grill it until it's perfectly brown and enjoy, enjoy enjoy!! Pair it with your favorite soup for a perfectly cozy comforting meal!!
